  • ½ tsp baking soda

  • ½ tsp cinnamon optional
  • 2 eggs
  • ½ cup vegetable oil
  • ½ cup sour cream or yogurt
  • 1 tsp vanilla extract
  • 1 ½ cups diced peaches
  • Cream Cheese Swirl:
  • 8 oz cream cheese
  • ¼ cup sugar
  • 1 egg
  • 1 tsp vanilla extract

Method
 

  1. Instructions:
  2. Preheat oven to 350°F (175°C). Grease loaf pan.
  3. Beat cream cheese, sugar, egg, and vanilla until smooth.
  4. Whisk dry ingredients in a large bowl.
  5. Whisk eggs, oil, sour cream, and vanilla in another bowl.
  6. Combine wet and dry ingredients, fold in peaches.
  7. Layer batter, cream cheese mixture, then batter again.
  8. Bake 50–60 minutes, cool 10 minutes, then remove from pan.

Notes

Notes:
Fresh peaches taste best, but canned or frozen work if drained well.
Add spices for warmth, glaze for extra sweetness, or coarse sugar for crunch.
