- Cook the ground beef in a skillet over medium heat. Drain excess fat.
- Add the chopped bell peppers, onions, and corn, cooking until softened.
- Stir in the diced tomatoes and taco seasoning, simmer for 5 minutes.
- Add cooked rice and mix well.
- Sprinkle cheese over the casserole and cover. Cook on low until cheese melts.

Add more vegetables like mushrooms or spinach.
