Ingredients
  

  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 yellow onion chopped
  • 1 cup corn kernels
  • 1 can diced tomatoes 14.5 oz
  • 1 packet of taco seasoning
  • 1 ½ cups shredded cheese

Method
 

  1. Cook the ground beef in a skillet over medium heat. Drain excess fat.
  2. Add the chopped bell peppers, onions, and corn, cooking until softened.
  3. Stir in the diced tomatoes and taco seasoning, simmer for 5 minutes.
  4. Add cooked rice and mix well.
  5. Sprinkle cheese over the casserole and cover. Cook on low until cheese melts.
  6. Serve and enjoy!

Notes

Add more vegetables like mushrooms or spinach.
For a spicier version, add jalapeños or red pepper flakes.
