Flaky Spinach and Cheese Pie

Ingredients
  

  • 2 sheets puff pastry thawed
  • 2 cups fresh spinach chopped, sautéed
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • ½ cup crumbled feta
  • 1 egg for wash
  • 1 tsp olive oil
  • Salt & pepper
  • Sesame seeds

Method
 

  1. Sauté spinach in olive oil until wilted; cool and squeeze out excess water.
  2. In a bowl, mix spinach, ricotta, mozzarella, feta, salt, and pepper.
  3. Lay one puff pastry sheet on a tray with parchment. Spread filling evenly.
  4. Top with second pastry sheet, seal edges with fork, and lightly cut squares.
  5. Brush with egg, sprinkle sesame seeds.
  6. Bake at 375°F (190°C) for 25–30 minutes until golden.
  7. Cool slightly before serving.

Notes

Add fresh herbs for extra flavor.
Freeze unbaked pie for up to 2 months.
Great for serving warm or at room temperature.
