Method
- Sauté spinach in olive oil until wilted; cool and squeeze out excess water.
- In a bowl, mix spinach, ricotta, mozzarella, feta, salt, and pepper.
- Lay one puff pastry sheet on a tray with parchment. Spread filling evenly.
- Top with second pastry sheet, seal edges with fork, and lightly cut squares.
- Brush with egg, sprinkle sesame seeds.
- Bake at 375°F (190°C) for 25–30 minutes until golden.
- Cool slightly before serving.
Notes
Add fresh herbs for extra flavor.
Freeze unbaked pie for up to 2 months.
Great for serving warm or at room temperature.
