Method

  2. Preheat oven to 350°F (175°C). Grease and flour a 9-inch bundt pan.
  3. In a bowl, whisk flour, baking powder, and salt.
  4. In another bowl, beat eggs and sugar until thick and pale (3–5 min).
  5. Mix in oil, milk, vanilla, and pudding powder.
  6. Fold dry ingredients gently into wet. Don’t overmix.
  7. Pour into pan and tap to release air bubbles.
  8. Bake for 35–40 minutes or until golden and fully cooked.
  9. Cool for 15 minutes in the pan, then invert onto a rack.
  10. Serve plain or with glaze, whipped cream, or fruit.
