Method

  4. Shake or whisk until smooth.
  5. Pour batter into muffin cups, 3/4 full.
  6. Bake on the bottom rack for 20–25 minutes until golden and puffed.
  7. Let cool slightly before serving.

Notes:
- For sweet muffins, add sugar and vanilla.
- For savory muffins, stir in cheese or herbs.
