  • 4 cups mixed greens
  • 1 large cucumber
  • 1 red bell pepper
  • 1 small red onion
  • 1 cup cherry tomatoes

  • ½ cup toasted nuts optional
  • ¼ cup dried fruit optional
  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp vinegar
  • 1 tsp honey
  • 1 garlic clove
  • Salt & pepper

Method
