  • 6 –8 ears fresh corn husked
  • ½ cup unsalted butter melted
  • 4 cloves garlic minced
  • 1 ½ cups shredded mozzarella or Monterey Jack cheese
  • 2 tbsp fresh parsley chopped
  • 1 tsp paprika
  • Salt & pepper to taste
  • 2 tbsp olive oil

Method
 

  1. Instructions:
  2. Boil corn in salted water for 4–5 minutes; drain.
  3. Melt butter in skillet, add garlic, and cook 1 minute.
  4. Add paprika, salt, and pepper.
  5. Sear corn in skillet until lightly browned.
  6. Sprinkle cheese over corn, cover, and melt.
  7. Garnish with parsley and serve hot.

Best served immediately for maximum cheesiness.
Parmesan or cheddar can be used for different flavor profiles.
