Ingredients
  

  • 2 cups cooked or shredded chicken
  • 6 tbsp cubed butter
  • ½ onion chopped
  • 2 cups Bisquick baking mix
  • 1 ½ cups chicken broth
  • 1 ½ cups milk
  • 1 cup grated Cheddar cheese
  • 1 can 10.5 oz cream of chicken soup
  • 2 cups mixed vegetables fresh or frozen

Method
 

  1. Preheat oven to 350°F (175°C). Place cubed butter in the baking dish and let it melt.
  2. In a bowl, whisk together milk and Bisquick. Set aside.
  3. In another bowl, whisk chicken broth and cream of chicken soup. Set aside.
  4. Layer chicken, vegetables, onion, and Cheddar cheese over melted butter. Do not stir.
  5. Pour Bisquick mixture evenly over layers.
  6. Carefully pour soup-stock mixture over the top.
  7. Bake for 45 minutes until golden brown and set.
  8. Rest 5 minutes before serving. Enjoy!

Notes

Add herbs like parsley or thyme for extra flavor.
Use rotisserie chicken for convenience.
Can substitute broccoli, peas, or corn for vegetables.
