Ingredients
  

  • 2 cups heavy cream
  • cups walnuts or pecans chopped
  • ½ cup unsalted butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon baking soda
  • 6 cups sugar divided

Method
 

  1. Lightly grease a 9×13-inch baking dish.
  2. Melt 2 cups sugar over low heat, stirring frequently (about 20 minutes).
  3. In another pot, combine remaining 4 cups sugar with heavy cream and simmer gently.
  4. Pour melted sugar into the cream mixture, stirring continuously.
  5. Cook over medium heat until the mixture reaches 244°F.
  6. Remove from heat and stir in baking soda.
  7. Add butter and vanilla, mixing until smooth.
  8. Rest for 20 minutes.
  9. Stir in nuts until evenly distributed.
  10. Pour into baking dish, cool completely, then cut into squares.

Notes

Use fresh pecans or walnuts for the best flavor.
Cool fully before cutting to avoid crumbling.
Wrap individually for gifts or freeze for up to three months.
