Ingredients
  

  • 1 lb smoked turkey sausage
  • 1 large onion chopped
  • 6 baby red potatoes
  • 6 baby golden potatoes
  • 1 tbsp olive oil
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp Cajun spice

Method
 

  1. Preheat oven to 400°F (200°C) and prepare baking sheet with foil and spray.
  2. Chop sausage, potatoes, and onion into chunks.
  3. Mix olive oil with sausage and potatoes. Season with spices.
  4. Spread evenly on baking sheet.
  5. Roast 55 minutes until potatoes are tender.
  6. Serve hot and enjoy.

Notes

Freeze leftovers up to 2 months.
Add bell peppers or cheese for variation.
