  • 2 cups whole milk
  • ½ cup granulated sugar
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 2 tbsp unsalted butter softened
  • 1 tsp pure vanilla extract
  • Pinch of salt

Method
 

  1. Instructions:
  2. Heat milk in saucepan until just simmering.
  3. Whisk egg yolks, sugar, cornstarch, and salt until pale.
  4. Temper eggs with hot milk, then return to saucepan.
  5. Cook over medium heat until thick and bubbling.
  6. Remove from heat; stir in butter and vanilla.
  7. Transfer to bowl, cover with plastic wrap, chill until set

Notes:
Keep refrigerated and consume within 3 days.
For chocolate variation, stir in chopped chocolate while hot.
