Potato Kielbasa Soup

Ingredients
  

  • 1 lb kielbasa sliced
  • 1 ½ lbs potatoes cubed
  • ½ cup onion diced
  • ½ cup celery chopped
  • ½ cup carrots diced
  • 2 tsp garlic minced
  • 4 cups chicken broth
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • ½ cup shredded Parmesan
  • 1 tbsp olive oil
  • ¼ cup parsley chopped
  • Salt & pepper to taste

Equipment

  • Large pot or Dutch oven
  • - Wooden spoon
  • - Ladle
  • Cutting board and knife

Method
 

  1. Heat olive oil in pot, brown kielbasa, set aside.
  2. Sauté onion, celery, carrots, garlic until soft.
  3. Add broth and potatoes, simmer 15 minutes until tender.
  4. Return sausage to pot.
  5. Stir in milk, cheddar, Parmesan until melted.
  6. Simmer 10 minutes, stirring.
  7. Season with salt, pepper, parsley. Serve hot.

Notes

Add red pepper flakes for spice.
Substitute cheddar with gouda or pepper jack.
Refrigerates up to 3 days, freezes 2 months.
