- Heat olive oil in pot, brown kielbasa, set aside.
- Sauté onion, celery, carrots, garlic until soft.
- Add broth and potatoes, simmer 15 minutes until tender.
- Return sausage to pot.
- Stir in milk, cheddar, Parmesan until melted.
- Simmer 10 minutes, stirring.
- Season with salt, pepper, parsley. Serve hot.
Notes
Add red pepper flakes for spice.
Substitute cheddar with gouda or pepper jack.
Refrigerates up to 3 days, freezes 2 months.
