Ingredients
  

  • 2 cups corn kernels
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup milk
  • 1 egg
  • 2 tbsp melted butter
  • Vegetable oil for frying

Method
 

  1. Mix corn, flour, baking powder, salt, and pepper in a bowl.
  2. In another bowl, whisk milk, egg, and butter.
  3. Combine wet and dry ingredients until just mixed.
  4. Heat oil in skillet.
  5. Drop spoonfuls of batter, flatten slightly, and fry 2–3 mins per side.
  6. Drain on paper towels and serve warm.

Notes

Add cheese, jalapeños, or herbs for variations.
Store leftovers in fridge 3 days or freeze 2 months.
