- Instructions:
- Preheat Oven – Set your oven to 400°F (200°C).
- Season Carrots – Toss peeled baby carrots with olive oil, salt, and pepper until well-coated.
- Roast – Spread carrots on a baking sheet and roast for 20–25 minutes, or until tender and slightly caramelized.
- Prepare Whipped Ricotta – While carrots roast, combine ricotta cheese, honey, and hot sauce in a bowl. Whip using a hand mixer or food processor until smooth and creamy.
- Assemble – Arrange roasted carrots on a serving platter, spread or dollop whipped ricotta over the top.
- Drizzle and Garnish – Finish with extra honey drizzle, chopped parsley, and a sprinkle of red pepper flakes for extra heat.
