  • 2 tbsp olive oil
  • Salt and pepper to taste
  • For the Whipped Ricotta:
  • ½ cup ricotta cheese
  • 1 tbsp honey
  • 1 tsp hot sauce adjust to taste
  • Optional Garnish:
  • Fresh parsley chopped
  • Crushed red pepper flakes

Method
 

  1. Instructions:
  2. Preheat Oven – Set your oven to 400°F (200°C).
  3. Season Carrots – Toss peeled baby carrots with olive oil, salt, and pepper until well-coated.
  4. Roast – Spread carrots on a baking sheet and roast for 20–25 minutes, or until tender and slightly caramelized.
  5. Prepare Whipped Ricotta – While carrots roast, combine ricotta cheese, honey, and hot sauce in a bowl. Whip using a hand mixer or food processor until smooth and creamy.
  6. Assemble – Arrange roasted carrots on a serving platter, spread or dollop whipped ricotta over the top.
  7. Drizzle and Garnish – Finish with extra honey drizzle, chopped parsley, and a sprinkle of red pepper flakes for extra heat.

Adjust hot sauce to your heat preference.
