Skinny Meatloaf

A healthier version of classic meatloaf, made with lean ground beef, egg whites, whole wheat bread, and a tangy sauce.

Ingredients
  

  • Meatloaf
  • - 1 lb lean ground beef
  • - 1 ½ slices whole wheat bread shredded
  • - 1 cup chopped Vidalia onion
  • - 3 egg whites
  • - Pinch of salt
  • - ½ tsp black pepper
  • ### Sauce
  • - 3 tbsp ketchup
  • - 1 tbsp yellow mustard
  • - 1 tbsp Worcestershire sauce

  • Large mixing bowl
  • - Small bowl for sauce
  • - Loaf pan
  • - Measuring cups & spoons

Method
 

  1. Preheat oven to 350°F. Spray loaf pan with nonstick spray.
  2. In bowl, combine beef, bread, onion, egg whites, salt, and pepper.
  3. Mix ketchup, mustard, and Worcestershire in small bowl.
  4. Pour sauce into beef mixture, mix, and shape into loaf. Place in pan.
  5. Bake 55 minutes or until internal temp reaches 160°F.
  6. Let cool 10 minutes before slicing into 5 portions.

Notes

- Store leftovers in fridge up to 4 days or freeze up to 2 months.
- Try turkey or chicken for a leaner version.
- Add grated veggies for extra nutrition.
