  • - **½ lb Italian sausage**
  • - **½ lb lean ground beef**
  • - **1 small onion** finely chopped
  • - **1 green bell pepper** finely chopped
  • - **1 red bell pepper** finely chopped
  • - **3 cloves garlic** chopped
  • - **4 cups low-sodium beef broth**
  • - **2 cups low-sodium chicken or vegetable broth**
  • - **1 14.5 oz can salsa tomatoes**
  • - **¾ cup raw rice** like jasmine
  • - **Kosher salt** to taste
  • - **Freshly ground black pepper** to taste

Method
 

  1. Brown the meats and sauté the vegetables in a large pot.
  2. Add the broth and tomatoes, and simmer for 15 minutes.
  3. Stir in the rice and cook for 5-7 minutes.
  4. Season with salt and pepper, and serve.

Notes

For a spicier twist, add jalapeños or red pepper flakes. For a creamy version, stir in some heavy cream or sour cream before serving.
