 Ingredients

  • 4 medium sweet potatoes, scrubbed clean

  • 2 cups fresh spinach, roughly chopped

  • 1 cup mushrooms, chopped

  • 1/2 cup grated cheese (Parmesan or cheddar work well)

  • 1/4 cup milk

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

 Directions

 Bake the Sweet Potatoes

  • Preheat oven to 400°F (200°C).

  • Pierce sweet potatoes with a fork and place them on a baking sheet.

  • Bake for 45–50 minutes, or until fork-tender.

Prepare the Filling

  • In a skillet, heat a drizzle of olive oil.

  • Sauté the garlic for 30 seconds, then add mushrooms and cook until browned.

  • Add the spinach and cook until wilted.

  • Reduce heat and stir in the cream cheese and milk. Mix until smooth.

  • Season with salt and pepper.

  • Once sweet potatoes are cooked, cut them in half lengthwise and gently scoop out a little of the flesh to make room for filling.
