Zucchini Patties – Better Than Meat!
Easy, healthy, and absolutely delicious! A perfect vegetarian alternative full of flavor and nutrients.
Ingredients:

2 medium zucchinis, grated

1 medium carrot, grated

1 cup shredded cheese (mozzarella or your favorite)

2 eggs

3–4 tablespoons chopped green onion

Salt and pepper to taste

Optional: 1 clove garlic (minced) or ½ tsp garlic powder

3 tablespoons flour or breadcrumbs (for texture)

Instructions:
Prep the vegetables:
Grate the zucchinis and carrots using a coarse grater. Place the zucchini in a clean towel and squeeze out excess water. This step is important for crispy patties.
Mix the ingredients:
In a large bowl, combine the grated zucchini, carrot, cheese, eggs, green onions, garlic (if using), salt, pepper, and flour or breadcrumbs. Mix until a thick, sticky batter forms.
Form the patties:
With your hands or a spoon, shape the mixture into small round patties or flat disks.
Cook:
Heat a non-stick skillet or frying pan over medium heat and add a little olive oil.
Cook the patties for 3–4 minutes on each side until golden brown and crispy.
Serve:
Serve warm with yogurt dip, sour cream, or your favorite sauce.
