Ingredients

  • ½ cup chopped onion

  • 2 tbsp butter or margarine

  • 1 (10 oz) can cream of chicken soup

  • 1 ½ cups milk

  • 1 lb Velveeta cheese, cubed

Instructions

  1. Sauté onions:
    In a small skillet, melt butter over medium heat. Add the chopped onion and sauté until translucent (about 3–5 minutes).

  2. Add to Crock Pot:
    Transfer the sautéed onions to the crock pot. Add cream of chicken soup, milk, cubed Velveeta, and frozen broccoli.

  3. Cook low and slow:
    Cover and cook on LOW for 3–4 hours, stirring occasionally until cheese is melted and soup is creamy.

  4. Serve warm:

  • No Velveeta? Use a mix of shredded cheddar and cream cheese for a similar texture.
