Creamy Italian Sausage and Parmesan Soup
Ingredients:
1 pound sweet Italian sausage

2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
6 cups chicken broth
1 cup heavy cream

1 1/2 cups pasta ditalini
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste

4 cups fresh spinach, coarsely chopped
1 cup grated Parmesan cheese, plus more to decorate
Chopped fresh parsley to decorate

Prep:
In a large pot, cook and shred the Italian sausage over medium heat until completely browned.
Remove with a slotted spoon and reserve. Add
olive oil to the pot and fry the onion until soft. Add garlic for a minute until fragrant. Pour in
chicken stock and bring to the boil.Add cream, oregano, basil and red pepper flakes and season with
salt and pepper.
Add the Ditalini pasta and cook until al dente.

Add the sausage and spinach back in and cook until the spinach is wilted.
Remove from heat, stir in Parmesan until melted.
Serve garnished with more Parmesan cheese and parsley.Variations and tips:
Choose half-and-half or whole milk for a less rich option. For more creaminess,
mascarpone can be added.
Adding carrots or red peppers can provide additional sweetness and color.
The flavor of the soup intensifies over time, although the noodles may absorb more broth. If
necessary, add additional liquid when warming up.
