Beef and Vegetable Pasta
Ingredients:
12 oz penne pasta
2 tablespoons olive oil
1 lb beef sirloin, cut into thin strips

Salt and pepper to taste
1 medium onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped

1 zucchini, chopped
1 can (14.5 oz) diced tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Instructions:
Cook Pasta:
Cook the penne pasta according to the package instructions until al dente.
Drain and set aside.

Cook Beef:
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
Season the beef strips with salt and pepper.
Add the beef to the skillet and cook until browned, about 3-4 minutes. Remove from the skillet and set aside.
Sauté Vegetables:
In the same skillet, add the remaining tablespoon of olive oil.
Add the chopped onion and garlic, and sauté until the onion is translucent.
Add the chopped bell peppers and zucchini. Cook for about 5-7 minutes until the vegetables are tender.

Add the diced tomatoes (with juice) to the skillet. Stir in the oregano, basil, and red pepper flakes (if using).
Return the cooked beef to the skillet. Simmer the mixture for about 5 minutes, allowing the flavors to meld.
Mix with Pasta:
Add the cooked penne pasta to the skillet and toss to combine everything thoroughly.
Cook for an additional 2-3 minutes until the pasta is heated through.
Serve:
Divide the pasta among plates and sprinkle with grated Parmesan cheese.
Garnish with fresh parsley and serve hot.
