Berry Compote Cheesecake Bars Recipe
Ingredients:
For the Crust:

2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup sugar
For the Berry Compote:
2 cups mixed berries (strawberries, raspberries, and blueberries)

1/4 cup sugar
1 tablespoon lemon juice
2 teaspoons cornstarch mixed with 2 teaspoons water
For the Cheesecake Filling:
2 packages (8 ounces each) cream cheese, softened

1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream, whipped
For the Topping:
1 cup whipped cream

1/2 cup crumbled graham crackers
Instructions:
Prepare the Crust:
Mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a lined 9×13 inch baking dish. Chill in the refrigerator for 30 minutes to set.
Make the Berry Compote:
In a saucepan, combine berries, sugar, and lemon juice. Cook over medium heat until the berries release their juices. Stir in the cornstarch mixture and boil for 1 minute until thickened. Let cool completely.
Prepare the Cheesecake Filling:
In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in whipped cream.
Assemble the Dessert:
Spread half of the cheesecake filling over the crust. Spoon the cooled berry compote over the filling. Top with the remaining cheesecake filling. Refrigerate for at least 4 hours or until set.

Just before serving, spread whipped cream over the top and sprinkle with crumbled graham crackers.
