Cheesy Pepperoni Pizza Roll-Ups (Low-Carb)

Ingredients:

4 low-carb tortillas

1 cup shredded mozzarella cheese

16 pepperoni slices

Directions:
1. Preheat and prep:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil spray.
2. Assemble the roll-ups:
Lay out each tortilla and spread 2 tablespoons of pizza sauce across the surface. Sprinkle with ¼ cup mozzarella cheese, add 4 slices of pepperoni, and a dash of Italian seasoning.
3. Roll tightly:
Carefully roll up each tortilla, tucking the ends in if needed. Place seam-side down on the baking sheet.
