Cheesy Potato Bake with Crispy Bacon Recipe
Ingredients:
6 medium potatoes, peeled and thinly sliced
1 medium onion, thinly sliced (optional)
10 slices of bacon, cooked and crumbled
2 cups shredded cheddar cheese
3 cups milk

2 tablespoons all-purpose flour
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika

Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Prepare the Potatoes and Onion:
Slice the potatoes and onion thinly. Set aside.

Make the Cheese Sauce:
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
Gradually whisk in the milk, and continue cooking, stirring continuously, until the sauce thickens and starts to bubble.
Remove from heat, and stir in 1 1/2 cups of the shredded cheese until melted. Season with salt, pepper, and paprika.
Assemble the Casserole:

Layer half of the potatoes and onions in a greased baking dish.
Pour half of the cheese sauce over the potatoes.
Sprinkle half of the crumbled bacon over the sauce.
Repeat with another layer of potatoes and onions, cheese sauce, and bacon.
Bake:
Cover with aluminum foil and bake in the preheated oven for 60 minutes.
Remove the foil, sprinkle the remaining cheese over the top, and bake uncovered for an additional 20-30 minutes or until the potatoes are tender and the top is golden and bubbly.
Garnish and Serve:
Garnish with chopped green onions or chives.
