Crispy Fried Potatoes with Onions Recipe
Ingredients:
4-5 medium potatoes, peeled and thinly sliced

1 medium onion, finely chopped
3-4 tablespoons vegetable oil or butter (or a combination of both)
Salt and pepper to taste
Optional: 1 tsp garlic powder, 1 tsp paprika, or fresh herbs like parsley for extra flavor

Prepare the Potatoes:
Peel the potatoes and slice them thinly, about 1/8 inch thick. You can use a mandoline slicer for even slices.
Place the potato slices in a bowl of cold water and let them soak for about 10 minutes to remove excess starch. This helps in making the potatoes crispier.
Cook the Potatoes:
Drain the potatoes and pat them dry with a clean kitchen towel or paper towels.

In a large skillet, heat the oil or butter over medium-high heat.
Add the potato slices in a single layer. If your skillet is small, you may need to cook the potatoes in batches to avoid overcrowding.
Cook the potatoes undisturbed for about 5-7 minutes, until the bottom layer is golden brown and crispy.
Add Onions and Season:
Carefully flip the potatoes to cook the other side.

Add the chopped onions to the skillet, spreading them evenly over the potatoes.
Season with salt, pepper, and any additional seasonings you like (garlic powder, paprika, etc.).
Cook for another 5-7 minutes, stirring occasionally, until the potatoes are golden and crispy, and the onions are softened and caramelized.
Serve:
Remove the skillet from the heat and transfer the fried potatoes and onions to a serving dish.
Garnish with fresh herbs if desired.
Serve hot as a side dish or enjoy them on their own.
