Fluffy Apple Cake (Like Grandma’s!)

Ingredients:

3 medium apples (unpeeled, diced)

Juice of 1/2 lemon (to prevent browning)

3 eggs

2 cups sugar (adjust to taste)

3 heaping tbsp butter (~75 g, melted or softened)

1 tbsp ground cinnamon

2 cups all-purpose flour

1 tbsp baking powder

Instructions:
1. Prep the Apples:
Dice the apples and toss with lemon juice. Set aside.
2. Beat the Eggs & Sugar:
In a mixing bowl, beat eggs and sugar until light and frothy.
3. Add Butter:
Mix in the melted butter (or softened) until smooth.
4. Combine Dry Ingredients:
Sift in the flour and cinnamon, mixing gradually until no lumps remain.

5. Add Baking Powder:
Fold in the baking powder last and stir gently.
6. Assemble the Cake:
Grease a rectangular or round baking dish. Spread the apple cubes on the bottom and pour the batter over them.
7. Bake:
Bake in a preheated oven at 180°C (350°F) for 35–45 minutes or until golden and a toothpick comes out clean.
8. Cool & Serve:
Let cool slightly before serving. Optional: Sprinkle cinnamon sugar on top for extra flavor!
