Fondant Potatoes
Ingredients:
4-6 large Yukon Gold or Russet potatoes, peeled and cut into 2-inch thick rounds
2-3 tablespoons vegetable oil
4 tablespoons unsalted butter
4 cloves garlic, peeled and lightly crushed
2-3 sprigs fresh rosemary or thyme

1 cup chicken or vegetable broth
Salt and pepper to taste
Instructions:
Prepare the Potatoes:
Preheat your oven to 400°F (200°C).

After peeling and cutting the potatoes into thick rounds, place them in a bowl of cold water to remove excess starch. Let them soak for about 10 minutes, then drain and pat them dry with paper towels.
Sear the Potatoes:
In a large oven-safe skillet, heat the vegetable oil over medium-high heat.
Season the potato rounds generously with salt and pepper.
Place the potatoes in the hot skillet, flat side down, and sear them for about 5-6 minutes until they develop a deep golden-brown crust. Flip the potatoes and sear the other side for an additional 5-6 minutes.

Add Butter and Aromatics:
Once both sides are seared, add the butter to the skillet. Allow it to melt and foam slightly.
Add the garlic cloves and rosemary or thyme sprigs to the skillet.
Carefully tilt the skillet and spoon the melted butter over the tops of the potatoes to baste them, infusing them with flavor.
Add Broth and Bake:

Pour the chicken or vegetable broth into the skillet around the potatoes (not directly on top of them to keep the crust intact).
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the potatoes are tender inside and most of the broth has evaporated.
Serve:
Remove the skillet from the oven and discard the rosemary or thyme sprigs.
Serve the potatoes immediately, spooning any remaining pan juices over the top for extra flavor.
Tips:
