Ingredients for Prime Rib Roast

 

1 (4-5 pound) prime rib roast

2 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

1 tablespoon coarse sea salt

1 teaspoon black pepper

1 cup beef broth

1/2 cup red wine (optional)

Instructions:

  1. Prepare the Roast: Preheat your oven to 450°F (230°C). In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper to create a paste.
  2. Season the Roast: Rub the garlic-herb paste all over the prime rib roast, ensuring it is evenly coated.
  3. Roast: Place the roast on a rack in a roasting pan. Roast in the preheated oven for 15 minutes. Reduce the oven temperature to 325°F (165°C) and continue roasting until the internal temperature reaches your desired doneness (about 20 minutes per pound for medium-rare).
  4. Rest: Remove the roast from the oven and let it rest for at least 15-20 minutes before carving to allow the juices to redistribute.
  5. Optional Gravy: While the roast is resting, you can make a simple gravy. Place the roasting pan on the stovetop over medium heat. Add the beef broth and red wine (if using), and stir to deglaze the pan, scraping up any browned bits. Simmer until the liquid reduces by half, then strain the gravy into a serving dish.
