Fried Red Tomatoes

Ingredients:
– 4 large ripe red tomatoes, sliced about 1/2 inch thick
– 1 cup all-purpose flour

– 2 large eggs, beaten
– cup corn
– 1 cup panko bread crumbs
– 2 teaspoons salt, more for spices
– 1 teaspoon black pepper, other spices

– 1/4 teaspoon paprika (optional)
– Vegetable oil for frying
Preparation:
1. Add the flour, beaten egg and add corn and panko- Mix with corn. three separate bowls. Coat the
salt, black pepper and red pepper in the cornflour mixture and breadcrumbs. 2. First, place the tomato
slices into the dough and make sure that both sides are well sealed. Remove excess.
3. Dip the tomato puree into the beaten egg and let the excess egg drip off.
5. Half-fill a large pan with vegetable oil and heat over medium heat until it smokes.
6. Carefully place the tomato slices in a non-stick pan and fry until golden brown, about 2-3 minutes

on each side.
7. Use a slotted spoon to transfer to a rack or plate lined with a tea towel. While still hot, season
lightly with plenty of salt and pepper.

Variations and Tips:
– For a gluten-free recipe, replace all-purpose flour with your favorite gluten-free flour and use
gluten-free breadcrumbs.
– If you’re watching your oil, try “frying” it in an electric fryer. You’ll get a nice, crispy crust even
