I’m sorry it took so long to post the recipe.

The truth is that I had no idea where the hell he had written it. I keep several food diaries. Thank God I found her.

These Amagwinya are inspired by #Kwayishe, my mother. I made it for me and my brothers when we were

young.I was a working mother and barely had time to make these with yeast. So this brings back great memories

of my mom and I learning from her in the kitchen.

Although these days she is amazed at what I can do with food and always wants to learn from me. It’s the

strangest thing. She almost never tries my recipes anyway because she’s the busiest 73-year-old woman I

know.At 73 years old, she is still a working mother! I run a company and my number one role model is

Nakundixolela Zinkosi! & I love this woman to pieces

Ingredients

 

4 cups flour

6 teaspoons baking powder

1 teaspoon salt

5 tablespoons sugar

1 1/2 cups warm water

 

Method

Place a deep pot with vegetable oil, e.g. E.g. sunflower oil, preheat oil, rapeseed oil, peanut oil, grapeseed oil etc.

over medium heat.

While the oil is heating, mix all the ingredients in a large bowl until a dough forms.On a lightly floured surface,

shape the dough into a thick disc, then cut it into even circles using a cookie cutter. You can also form even balls

with floured hands.

Fry in hot oil until one side is golden brown and the other side looks cooked but still pale, then turn over and fry

the other side until evenly golden brown.

Once cooked, place in a large bowl lined with paper towels. Allow to cool slightly and serve with tea or sweet

coffee.On the farm where I grew up, we enjoyed them neat or with #igxogxa, also known as #reused tea, from

used tea bags or already prepared coffee granules. Kids weren’t allowed to drink real coffee and tea, but hey,

when they were kids! We loved Igxogxa. It’s the closest thing to coffee and tea that we can get.
