No-Bake Creamy Cheesecake

Ingredients
For the crust:
200 g graham crackers or digestive biscuits (about 1½ cups), crushed
100 g unsalted butter (about ½ cup), melted

400 g cream cheese (2 standard packs), softened
1 cup sweetened condensed milk
1 tsp vanilla extract
Juice of 1 lemon (for a balanced flavor)

Directions
1. Make the Crust
Mix crushed biscuits and melted butter until fully combined.
Press firmly into the base of a springform pan or pie dish.
Chill in the refrigerator for at least 15–20 minutes.
2. Prepare the Cheesecake Filling
In a large bowl, beat cream cheese until smooth and creamy.

Add the condensed milk, lemon juice, vanilla, and sour cream (if using). Mix until well incorporated and silky.
3. Assemble and Chill
Pour the filling over the chilled crust and smooth the top.
Refrigerate for at least 4 hours or until completely set. Overnight is best for a firm texture.
