Pineapple Glazed Pork Chops


4 bone-in pork chops

Salt and pepper to taste

2 tablespoons olive oil


1 cup pineapple chunks (fresh or canned)

1/4 cup pineapple juice

1/4 cup brown sugar

2 tablespoons soy sauce

1 tablespoon Dijon mustard


1 tablespoon fresh rosemary, chopped

2 cloves garlic, minced


Prepare the Pork Chops:

Season the pork chops generously with salt and pepper on both sides.


In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear them for 3-4 minutes on each side until they are golden brown. Remove the pork chops from the skillet and set them aside.

Make the Pineapple Glaze:

In the same skillet, add the pineapple chunks and cook for 2-3 minutes until they start to caramelize.

Stir in the pineapple juice, brown sugar, soy sauce, Dijon mustard, fresh rosemary, and minced garlic. Bring the mixture to a simmer and cook for 4-5 minutes until the sauce thickens slightly.

Combine and Cook:


Return the pork chops to the skillet, spooning some of the glaze over them.

Reduce the heat to medium-low, cover the skillet, and let the pork chops cook in the glaze for 10-15 minutes, or until they are cooked through and tender. The internal temperature should reach 145°F (63°C).


Transfer the pork chops to a serving platter and drizzle the remaining pineapple glaze over them.

Garnish with additional rosemary if desired.
