Ingredients:
4 cups thinly sliced potatoes
3 tablespoons butter

1 1⁄2 cups milk
3 tablespoons all-purpose flour
1 cup grated cheddar cheese
1⁄2 cup grated cheese (cheddar or gruyere) for Garnish
Salt to taste

Optional: 1/2 cup sliced green onions, a pinch of cayenne pepper
Instructions:
Preheat the oven to 190°C (375°F) and grease a baking dish.
Melt the butter in a saucepan over medium heat. Stir in flour and cook until golden brown, 1-2
minutes.
Gradually add the milk, stirring constantly, and cook over low heat until the sauce thickens.
Remove from heat, stir in sharp cheddar cheese, salt and optional cayenne pepper until smooth.Place
half of the potato slices in the baking dish. Pour half of the cheese sauce over it.
Layer the remaining potatoes and cover with the remaining sauce.
Sprinkle the top with the extra grated cheese.

Cover with foil and bake for 45 minutes, then cover and bake for another 15-20 minutes until golden
brown and crispy.Serve hot, garnished with spring onions if desired. Every bite of these scalloped
