In a mixing bowl, combine the mozzarella cheese, chopped spinach, sun-dried tomatoes, and minced garlic. Mix well.

Prepare the Chicken Breasts:

Using a sharp knife, carefully slice a pocket into each chicken breast. Be sure not to cut all the way through.

Stuff each pocket with the prepared filling, using toothpicks to secure the edges if necessary.

Season the Chicken:

Season the chicken breasts with salt, pepper, paprika, and Italian seasoning.

Sear the Chicken:

In a large oven-safe skillet, heat the olive oil over medium-high heat.

Add the chicken breasts and sear on each side until golden brown, about 3-4 minutes per side.

Bake the Chicken:

Pour the chicken broth into the skillet around the chicken breasts.

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

Serve:

Remove the toothpicks from the chicken breasts.

Garnish with freshly chopped parsley.

Serve hot with your choice of side dishes.

Tips:

Ensure even cooking: To ensure the chicken breasts cook evenly, try to select breasts that are similar in size and thickness.

Add extra flavor: For added flavor, you can marinate the chicken breasts in a mixture of olive oil, lemon juice, garlic, and herbs for a few hours before stuffing and cooking.

Side dish suggestions: This dish pairs well with roasted vegetables, mashed potatoes, or a fresh green salad.

Enjoy your delicious stuffed chicken breast, full of cheesy, savory goodness!
