  • ½ cup (120g) unsalted butter, softened

  • ½ cup (130g) creamy peanut butter

  • ½ cup (100g) brown sugar, packed

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 cup (125g) all-purpose flour

  • ½ teaspoon baking soda

  • ¾ cup semi-sweet or milk chocolate chips

  • Optional: mini Reese’s peanut butter cups for the center

 Instructions

1. Prep the Oven

Preheat your oven to 350°F (175°C). Line a mini muffin tin with liners or lightly grease with nonstick spray.

2. Make the Dough

In a mixing bowl, cream together the softened butter, peanut butter, brown sugar, and granulated sugar until fluffy. Add in the egg and vanilla extract; beat until combined.

3. Shape & Fill

4. Bake

5. Cool
