Roasted Carrots with Whipped Ricotta and Hot Honey

Ingredients:

  • 1 lb baby carrots, peeled

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • ½ cup ricotta cheese

  • 1 tbsp honey

  • 1 tsp hot sauce (adjust to your heat preference)

  • Optional: Fresh parsley for garnish

Instructions:

1️⃣ Preheat oven
Set oven to 400°F (200°C). Line a baking sheet with parchment.

2️⃣ Prep the carrots
In a bowl, toss baby carrots with olive oil, salt, and pepper until well coated.

3️⃣ Roast
Spread carrots on the baking sheet and roast for 25–30 minutes, flipping halfway, until tender and slightly caramelized.

4️⃣ Whip the ricotta
While carrots roast, add ricotta to a bowl. Whisk until creamy. Optional: add a dash of salt or lemon zest for extra flavor.

5️⃣ Make the hot honey
In a small bowl, mix honey with hot sauce. Heat for 10–15 seconds in the microwave if needed to blend smoothly.

6️⃣ Assemble
Plate roasted carrots, dollop whipped ricotta over them, and drizzle generously with hot honey.
