Ingredients

  • 260 grams all-purpose flour (~2 cups)

  • 100 grams sugar (~½ cup)

  • Zest of 1 lemon

  • Pinch of salt

  • 50 ml vegetable oil (~3½ tablespoons)

  • 25 ml milk (~1½ tablespoons)

  • 8 grams baking powder (~2 teaspoons)

  • Extra sugar for coating

Instructions

1. Prepare the Dough

  • In a large bowl, mix together the flour, sugar, lemon zest, and salt.

  • Add the egg, oil, and milk. Mix well until a soft dough forms.

  • Stir in the baking powder and combine until evenly distributed.

2. Shape the Cookies

  • Preheat your oven to 180°C (350°F).

  • Line a baking tray with parchment paper.

  • Lightly flour your hands. Shape the dough into small balls.

  • Roll each ball in sugar and place on the baking tray with space between them.

  • Press gently with the back of a spoon to slightly flatten into cookie shape.
