Strawberry Lemon Cheesecake is a delightful and refreshing dessert that combines the creamy

For the Crust:

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar


1/2 cup unsalted butter, melted

For the Cheesecake Filling:

3 packages (8 oz each) cream cheese, softened

1 cup granulated sugar

3 large eggs

1 cup sour cream


1 teaspoon vanilla extract

Zest and juice of 1 lemon

1 1/2 cups fresh strawberries, sliced

For the Lemon Glaze:

1/2 cup granulated sugar

1/4 cup freshly squeezed lemon juice


2 tablespoons water

1 tablespoon cornstarch

For the Topping:

Whipped cream

Fresh strawberries, halved

Lemon zest curls


Prepare the Crust:

Preheat your oven to 350°F (175°C).

In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix

until the crumbs are evenly coated.


Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the crust for 10 minutes, then remove from the oven and let it cool completely.

Prepare the Cheesecake Filling:

In a large mixing bowl, beat the softened cream cheese until smooth and creamy.

Add the granulated sugar and beat until well combined.

Add the eggs one at a time, beating well after each addition.

Mix in the sour cream, vanilla extract, lemon zest, and lemon juice until the batter is smooth and well


Gently fold in the sliced strawberries.

Bake the Cheesecake:

Pour the cheesecake filling over the cooled crust, spreading it evenly.

Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.

Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.

Remove the cheesecake from the oven and let it cool completely at room temperature.

Once cooled, refrigerate the cheesecake for at least 4 hours or overnight to allow it to set fully.

Prepare the Lemon Glaze:

In a small saucepan, combine the granulated sugar, lemon juice, water, and cornstarch.

Cook over medium heat, stirring constantly, until the mixture thickens and becomes translucent.

Remove from heat and let it cool slightly before pouring over the chilled cheesecake.

Decorate the Cheesecake:

Before serving, decorate the top of the cheesecake with whipped cream, fresh strawberry halves, and

lemon zest curls.
