Baked Chicken and Rice
Ingredients:
5 boneless, skinless chicken thigh fillets (optional)
1 medium onion, chopped
2 garlic cloves (large), chopped
2 tablespoons butter or olive oil

1 1/2 cups uncooked white rice
1 1/2 cups chicken broth, spicy!
1 1/4 cups water
Chicken sauce:
1 teaspoon paprika.

1 teaspoon dried thyme…
1/2 tsp garlic powder…
1/2 tsp onion..
3/4 teaspoon salt…
black pepper…

Optional garnish:
Olive oil spray…Fresh thyme or parsley leaves, finely chopped…
Instructions:
Preheat the oven to 350°F.
Spread the onion and garlic in a baking dish (approx. 25 x 35 cm) and put the butter in the middle.Bake for 15
minutes (check after 12 minutes, turning to see if any pieces have browned too much).

In the meantime, mix in the chicken rub. Sprinkle both sides of the chicken with it.
Take the mold out of the oven. Add the rice and mix.Place chicken on top of the rice. Then pour chicken broth
and water around the chicken.
Cover with aluminum foil and bake for 30 minutes. Remove the foil, spray the chicken with oil (optional, it gives
the chicken a nicer finish) and then bake for another 20 minutes until the liquid is absorbed.
