Carrot Cake


2 cups all-purpose flour

2 teaspoons baking powder

2 teaspoons baking powder

1 teaspoon cinnamon

1/2 teaspoon salt


3 cups grated carrots (about 6-7 medium carrots)

1 cup vegetable oil

4 large eggs

2 cups granulated sugar

2 teaspoons vanilla extract


1 cup chopped walnuts or pecans (optional)

For the cream cheese frosting:

8 ounces cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar


1 teaspoon vanilla extract




Preheat the oven to 180°C (350°F) and grease a baking dish. 9 x 13 inch baking pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt.


In a separate large bowl, stir together the grated carrots, vegetable oil, eggs, sugar and vanilla extract until well


Add the dry ingredients to the wet ingredients and mix until well combined. Add chopped walnuts (if using).Pour

the batter into the prepared baking dish and bake for 35-40 minutes or until a toothpick inserted into the center

comes out clean.

While the cake is baking, prepare the cream cheese frosting. In a large bowl, beat cream cheese and butter until

smooth. Gradually add powdered sugar and vanilla extract and beat until frosting is smooth and creamy.

Once the cake has completely cooled, spread the frosting evenly over the top of the cake.Cut, serve and enjoy

your delicious homemade carrot cake!
