Banana Caramel Pudding Recipe
Ingredients:
For the Pudding:
2 cups milk
1/4 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract

For the Caramelized Banana Topping:
2-3 ripe bananas, sliced
1/2 cup brown sugar
2 tablespoons butter

Instructions:
Prepare the Pudding:
In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt.
Place the saucepan over medium heat, stirring constantly until the mixture thickens (about 5-7 minutes). Be careful not to let it boil.

Once thickened, remove the pudding from heat and stir in the vanilla extract.
Pour the pudding into individual serving bowls or ramekins and refrigerate to set while you prepare the topping.
Make the Caramelized Banana Topping:
In a skillet, melt the butter over medium heat. Add the brown sugar and water, stirring until the sugar dissolves and begins to caramelize (about 2-3 minutes).
Add the banana slices to the caramel and cook for another 2 minutes, stirring gently to coat the bananas in the caramel sauce.
