Black Pepper Chicken with Mushrooms

Ingredients:

  • 2 boneless, skinless chicken breasts, thinly sliced

  • 1 tbsp cornstarch

  • 1 tsp salt

  • ½ tsp ground black pepper (adjust to taste)

  • 2 tbsp oil (vegetable or olive oil)

  • 1 cup mushrooms, sliced (cremini or button)

  • 1 small onion, sliced

  • 2 cloves garlic, minced

  • 1 tbsp oyster sauce

  • ½ tsp sugar

  • 2 tbsp water

  • Chopped green onions for garnish (optional)

Instructions:

  1. Marinate the Chicken
    In a bowl, toss the chicken slices with cornstarch, salt, and black pepper. Set aside for 10 minutes.

  2. Stir-Fry
    Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until golden brown and almost cooked through. Remove and set aside.

  3. Sauté Veggies
    In the same skillet, add another tablespoon of oil. Sauté onions and garlic until fragrant. Add mushrooms and cook until they release their moisture and turn golden.

  4. Combine & Sauce
    Return the chicken to the skillet. Add soy sauce, oyster sauce, sugar, and water. Stir-fry everything together for another 2–3 minutes until sauce thickens and coats the chicken well.

  5. Serve Hot
    Garnish with green onions if desired and serve immediately with rice, noodles, or over a warm grain bowl.
