Cheese and Potato Fritters Recipe
Ingredients:
2 cups mashed potatoes (you can also use cooked, mashed cauliflower for a low-carb option)
1 cup shredded cheddar cheese (or mozzarella for a gooier texture)
1/4 cup grated Parmesan cheese
1/4 cup chopped green onions or chives

1 large egg, beaten
1/4 cup all-purpose flour (or breadcrumbs for extra crunch)
Salt and pepper to taste
1/2 tsp garlic powder (optional)
Vegetable oil for frying

Instructions:
Prepare the Mixture:
In a mixing bowl, combine the mashed potatoes, shredded cheddar, Parmesan cheese, green onions, and beaten egg. Mix until well combined.
Add the flour (or breadcrumbs), salt, pepper, and garlic powder (if using). Mix until everything is thoroughly combined and holds together. Add more flour if the mixture seems too wet.

Shape the Fritters:
Take about 2 tablespoons of the mixture and shape it into small patties or balls, pressing gently to form them. Repeat with the remaining mixture.
Heat the Oil:
In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. Make sure the oil is hot enough for frying (you can test it by dropping a small piece of the mixture in; it should sizzle immediately).
Fry the Fritters:

Carefully place a few fritters into the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.
Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.
Serve:
Garnish with fresh dill or parsley if desired, and serve hot. These fritters are delicious on their own or with a dipping sauce like sour cream, garlic aioli, or marinara.
Tips:
For a twist, add cooked, crumbled bacon or finely chopped jalapeños for extra flavor.
If you prefer baking over frying, place the fritters on a greased baking sheet and bake at 400°F (200°C) for 15-20 minutes, flipping halfway through until golden and crispy.
