Cheesy Broccoli Rice Casserole

This family favorite is baked to golden perfection and loaded with rice, broccoli, and a rich cheese sauce that keeps everyone coming back for seconds.

 Ingredients:

  • 2 cups cooked white rice

  • 2 cups steamed broccoli florets (chopped)

  • 2 cups cooked chicken breast (optional, shredded)

  • 1 can (10.5 oz) cream of chicken or mushroom soup

  • ¾ cup sour cream or plain Greek yogurt

  • 1 ½ cups shredded cheddar cheese

  • ½ cup milk

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt and black pepper, to taste

  • Extra shredded cheese for topping (about ½ cup)

 Instructions:

1. Preheat oven
Set your oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.

2. Mix the base
In a large bowl, combine the cooked rice, broccoli, chicken (if using), cream of soup, sour cream, milk, 1½ cups cheddar cheese, and all seasonings. Stir until fully blended.

3. Pour and top
Transfer the mixture into your greased baking dish. Spread evenly and sprinkle with the remaining cheese on top.

4. Bake
Bake uncovered for 25–30 minutes or until hot and bubbly, and the top is golden brown.

5. Serve and enjoy!
Let rest 5 minutes before serving for best texture. Enjoy with a side salad or garlic bread!
