1/2 cup breadcrumbs (optional, for extra crunch)
Vegetable oil for frying
Instructions
Step 1: Prepare the Potato Mixture
In a large mixing bowl, combine the mashed potatoes, shredded cheese, Parmesan cheese, flour, egg, chives, salt, pepper, garlic powder, and onion powder.
Mix all the ingredients until well combined. The mixture should be thick enough to hold its shape. If it’s too soft, add a little more flour.

Step 2: Shape the Patties
Take a small amount of the potato mixture (about 2 tablespoons) and shape it into a patty using your hands.
If you prefer extra crunch, coat each patty in breadcrumbs.
Place the formed patties on a plate and continue until all the mixture is used.
Step 3: Fry the Patties
Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
Once the oil is hot, add the potato patties in batches, making sure not to overcrowd the skillet.
Fry the patties for about 3-4 minutes on each side, or until they are golden brown and crispy.
Use a spatula to carefully flip the patties and fry the other side until equally golden and crispy.

Remove the patties from the skillet and place them on a plate lined with paper towels to drain any excess oil.
Step 4: Serve
Serve the cheesy potato patties warm, garnished with extra chopped chives if desired.
These patties pair well with sour cream, ranch dressing, or your favorite dipping sauce.
Tips for Success
Make sure the mashed potatoes are not too wet. If they are, you can add a bit more flour to help bind the mixture.
You can add other ingredients to the potato mixture, such as cooked bacon bits, chopped green onions, or your favorite herbs for extra flavor.
For a healthier version, you can bake the patties in a preheated oven at 400°F (200°C) for about 20 minutes, flipping halfway through.
Cheesy potato patties are a versatile and satisfying dish that can be enjoyed as an appetizer, side dish, or even a main course. Their cheesy goodness and crispy texture make them a hit with both kids and adults alike. Enjoy your homemade cheesy potato patties!
