Ingredients

For the Chicken:

  • 1 lb boneless chicken breast, cut into bite-sized pieces

  • 1 tbsp fresh ginger, grated

  • 2 tbsp soy sauce

  • 2 tbsp lemon juice

  • 1 clove garlic, minced

  • 1/2 tsp black pepper

  • 1 tsp honey (optional for slight sweetness)

For the Pineapple Mango Salsa:

  • 1 cup fresh pineapple, diced

  • 1 ripe mango, diced

  • 1/4 cup red onion, finely chopped

  • 1 small red chili or jalapeño, minced (optional)

  • Juice of 1 lime

  • 2 tbsp chopped fresh cilantro

Instructions

1. Marinate the Chicken

In a bowl, combine chicken pieces with soy sauce, lemon juice, olive oil, garlic, ginger, pepper, and honey. Let marinate for at least 30 minutes in the fridge.

2. Grill or Sear

Preheat a grill pan or skillet. Cook chicken on medium-high heat until golden and fully cooked (about 4–5 mins per side).

3. Prepare the Salsa

In another bowl, combine pineapple, mango, onion, chili, lime juice, cilantro, and a pinch of salt. Mix well and chill.

4. Serve
