Chocolate Pecan Caramel Patties Recipe
Ingredients:
1 cup pecan halves
1 cup soft caramel candies
1 tablespoon cream (to soften the caramel)
8 oz semisweet or dark chocolate, chopped

Prepare the pecans:
Arrange pecan halves in small clusters of about 4-5 pieces on a parchment-lined baking sheet. These will act as the base of your patties.
Melt the caramel:
In a small saucepan over low heat, combine the caramel candies and cream. Stir continuously until the caramels have melted and the mixture is smooth.
Spoon the melted caramel over each pecan cluster, ensuring they are well coated but maintaining a patty shape. Allow the caramel to cool and set slightly.

Melt the chocolate:
Melt the chocolate in a heatproof bowl over a pot of simmering water (double boiler method), or in the microwave in 30-second bursts, stirring until smooth.
Assemble the patties:
Dip each caramel pecan cluster into the melted chocolate using a fork, letting the excess drip off.
Return the coated patties to the parchment paper. Optionally, top each with a pecan half for decoration and sprinkle a little sea salt on top while the chocolate is still wet.

Allow the chocolate to harden completely at room temperature, or speed up the process by chilling the patties in the refrigerator for about 30 minutes.
