Coconut Custard Bars Recipe
Ingredients:
For the Base:
1/2 cup (113g) unsalted butter, softened
1/3 cup (67g) sugar
1 cup (120g) all-purpose flour

3 large eggs
1 cup (200g) sugar
1/2 cup (120ml) lemon juice
1/3 cup (40g) all-purpose flour
1 cup (80g) shredded coconut

Instructions:
Prepare the Base:
Preheat your oven to 350°F (175°C).
Cream together the butter and sugar until light and fluffy.
Gradually mix in the flour until a soft dough forms.
Press the dough evenly into the bottom of a greased 9×13 inch baking dish.

Bake for 15-20 minutes until lightly golden. Remove from oven and let cool slightly.
Make the Custard:
In a large bowl, whisk together eggs and sugar until smooth.
Add lemon juice and flour, whisking until there are no lumps.
Stir in the shredded coconut.

Pour this mixture over the pre-baked base.
Bake the Bars:
Return the dish to the oven and bake for an additional 20-25 minutes, or until the custard is set and the top is lightly golden.
Cool and Serve:
Let the bars cool in the pan on a wire rack.
Once cool, dust with additional powdered sugar if desired and cut into bars.
