Crispy French Fries
Ingredients:
4 large russet potatoes

Vegetable oil, for frying
Salt, to taste
Optional seasonings: garlic powder, onion powder, paprika, or black pepper
Instructions:
Prepare the Potatoes:
Peel the potatoes (if desired) and cut them into thin strips, about 1/4 inch thick.

Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.
Dry the Potatoes:
After soaking, drain the potatoes and pat them dry with paper towels. Removing as much moisture as possible is key to achieving crispy fries.
Heat the Oil:
Pour vegetable oil into a deep fryer or a large, heavy pot to a depth of about 2-3 inches. Heat the oil to 325°F (160°C).

First Fry:
Working in batches, fry the potatoes for about 3-4 minutes, or until they are pale and soft. Do not brown them at this stage.
Remove the fries from the oil and drain them on paper towels. Allow them to cool while you finish the first fry for all batches.
Second Fry:
Increase the oil temperature to 375°F (190°C).

Fry the potatoes again, in batches, for another 3-4 minutes or until they are golden brown and crispy.
Drain the fries on paper towels and immediately season with salt and any additional seasonings you like.
Serve:
Serve the fries hot, with your favorite dipping sauces.

Double Frying: The key to crispy fries is frying them twice—once to cook the potatoes through and a second time to crisp up the exterior.
Avoid Overcrowding: Fry in small batches to maintain the oil temperature and ensure even cooking.
Season Immediately: Season the fries as soon as they come out of the oil, so the salt adheres better.
