Cowboy Cookies are delicious treats filled with chocolate chips, oatmeal, coconut and chopped nuts. They are slightly crispy on the outside and soft with a chewy note on the inside.

• 2 cups all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking powder
• 1/2 teaspoon ground Cinnamon

• 3/4 cup unsalted butter, softened
• 3/4 cup granulated sugar
• 3/4 cup light brown sugar
• 2 eggs, warmed to room temperature
• 1 teaspoon vanilla extract
• 1 1/ 2 cups old-fashioned rolled oats
• 1 1/2 cups semisweet chocolate chips
• 3/4 cups chopped pecans

• 1 cup shredded coconut (optional, but highly recommended)
How to cook so the screen doesn’t go dark
INSTRUCTIONS
1. Heat Preheat the oven to 180°C. Line baking sheets with parchment paper or silicone baking mats.2. Mix together the flour, baking soda, baking powder, ground cinnamon and salt; put aside.
3. Beat butter and sugar with a mixer until fluffy. Add eggs one at a time; mix until well combined.Stir in the vanilla and add the dry ingredients in 3 parts. Continue mixing until well combined,
scraping the bowl and beaters as you go.
4. Add the chocolate chips, oats, chopped walnuts and shredded coconut (optional). Place 1 1/2 rounded tablespoons on parchment-lined baking sheets.Press down slightly with the palm of your
hand. Bake until lightly browned; 9-11 minutes. Allow cookies to cool for 5 minutes before placing on cookie cooling racks.
NOTES
• Beat sugar and butter until fluffy. In a food processor on level 4 it takes about 3 minutes.
• Soften the butter at room temperature until a well is formed when lightly pressed.
• Heat the eggs to room temperature. This takes about 30 minutes.• Old-fashioned oats, also called rolled oats, provide a chewier texture and more flavor than quick oats.
• For best results, use parchment paper or a silicone baking mat. Promotes even baking, reduces spreading,
• Use good quality chocolate and, if possible, chop the nuts yourself.
• Resist the temptation to overbake cookies. Cook until lightly browned.• Coconut is a great addition to these cookies. It adds lots of flavor and moisture. So if you like it, try it. My teenagers don’t
like coconut, so I left it out this time.
• Other accessories you could add include dried fruits such as cranberries, raisins, figs or dates.
• You can replace it with other nuts such as walnuts, almonds, pistachios or macadamia nuts.• If you overdo the ingredients (like I always do), after placing them on the baking sheet, press them
lightly with the palm of your hand.
• Store baked cookies in an airtight container on the counter for up to four days or freeze for up to three months.
